September is deer shooting time, and my father is a passionate member of the local hunting team.
It has been five days, and they have already gotten five of their quota of 18. As my father is both a shooter and a land-owner with rights to the meat from his land, he get quite a share of meat each fall.
Last night they got the first part, and as he filet and divides, I collected the scraps to make minced meat for deer patties.
I think it's so great to be able to make great dinners of food otherwise thrown out, and it was also a great chance for us to test the grinder-attachment for the Kenwood kitchen machine.
With some left-over lard from earlier this summer, we made wonderful minced, and with that, great patties.

Starting point - about 600g of deer cuts and 150g lard with some pork on it. |

This was the first time using the meat grinder function for the kitchen machine, so that was exciting!

We started with the coarsest setting, and feed everything through. |

Then we changed to medium, and by now it looked like a good and smooth dough.

Then I added some eggs and spices to make patties. |
|
I always make a test-one to check if there is enough salt and spice. Also today it was worth it because I ended up adding almost a whole tablespoon more salt. |

We got enough for a dinner for my parents and us, and two more packs for the freezer. Not bad for meat otherwise thrown out, huh? |
